Carrot Pupcakes

Ingredients to make 6 cupcakes:

1 Cup Grated Carrot

1.5 Cups Of Wholemeal Flour

1/4 Cup Rolled Oats

2 Tbsp Cinnamon

1/4 Cup Applesauce

2 Free Range Eggs (Beaten)

Frosting:

1/2 Cup Low Fat Cream Cheese

Preheat oven to 175 Degrees Celsius. Lightly grease a regular 6 cupcake tin

Combine grated carrot beaten eggs and apple sauce in a medium bowl.

Combine flour, oats and cinnamon in a large bowl.

Slowly add the wet ingredients to the dry ingredients to form a thick batter.

Spoon the mixture evenly in the cupcake tin ensuring they are filled, as the mixture will not rise. Place in the oven.

Bake for 20 minutes. Allow to cool in a pan for 5 minutes, then transfer to a cooling rack.

Once cooled, ice with a small amount of cream cheese, carrot shavings and serve.

***Rolled oats are an excellent source of dietary fibre and iron, rolled oats in small quantities can assist in healthy digestion and increased energy levels for lethargic dogs.
